Level 2 Traineeship in Professional Bakery
Do you love to bake cakes and breads? Do you have a passion for pastry? Would you love a career working as a baker, or to start your own business? The Traineeship programme will allow participants to achieve a full Level 2 Diploma qualification in one year.

We have 2 sessions available for application on this course in Lisburn, Bangor.
Participants will develop practical bakery skills, including mixing, shaping, baking, decorating, and finishing a range of products. The programme also introduces foundational food preparation and hygiene practices to support progression within the bakery and wider food industry.
This hands-on traineeship provides practical experience in our bespoke kitchen environments. As part of their learning, all participants will complete practical bakery sessions in SERC’s training kitchens, gaining valuable industry-standard experience and building confidence in producing bread, pastries, cakes, and other baked goods.
A key feature of the course is industry work experience, giving learners the opportunity to explore different bakery roles and make informed decisions about their future career. This practical exposure supports career decision-making and enhances employability.
Ideal for school leavers who have achieved their GCSEs, this traineeship equips learners with the practical skills, knowledge, and confidence needed for a rewarding career in bakery or food production.
In addition to technical training, the course also develops a range of transferable (transversal) skills that are essential for employment, including:

* Teamwork
* Communication
* Time management
* Entrepreneurship
This one year traineeship will be completed over 15 to 21 hours per week dependent on student's Essential Skills requirement.
The Traineeship programme will allow participants to achieve a full Level 2 qualification and will comprise the following key elements:
- A main vocational based qualification
- Vocational skills development
- Transversal and digital skills
- Work placement Literacy and numeracy qualifications at Level 2 (may include GCSE qualifications in English and Mathematics)
- Additional qualifications deemed necessary for work within a sector e.g Food Safety, Allergen Awareness
You will need:
- 4 GCSEs grade D-G, including grade E in Maths and grade E in English or equivalent
Applicants that have not obtained the above grades may be eligible to enrol upon a Traineeship programme dependent upon successful completion of literacy and / or numeracy pre-entry assessments as required. Please contact us for further information.

Demonstrate bake and post-bake skills in cake and sponge flour confectionery

Principles of flour in bakery
Principles of sugars and starches in bakery
Principles of egg and egg products in bakery
Principles of retarding and proving dough and process control
The principles of food safety for manufacturing
Enterprise Units
Principles of preparing a plan for food business
Principles of developing a food business idea
Principles of planning the marketing of food business products or services
